Marsala
Marsala originates from the city of Marsala in Sicily and can either be dry or sweet. It is made in a similar way to that of sherry, with the use of a solera system to create an ongoing product. It is used with white grape varieties native to that of Sicily and ranges in colour due to length of ageing. It used frequently to cook with, particularly in traditional Italian dishes.
